Shepherds Pie

Serves 4

Ingredients
500g lean beef mince or turkey mince
2 large sweet potatoes (approx. 800g)
4 carrots sliced
1 large onion chopped
100g peas
250ml beef/vegetable stock
100g goats cheese (hard or soft) or cheddar (optional)
Coconut oil/rapeseed oil
1 tbsp mixed herbs or herbs de provence
1 tbsp Worchester sauce
Salt/pepper to taste

Method
Pre heat oven to 180C.

Skin sweet potatoes, chop and boil for 20 minutes. Chop onion and
carrots. Heat a large pan with 1 tsp of coconut oil. Add onions, stir for 2 – 3 minutes until
slightly golden. Add mince to pan and cook until brown. Add 1 tbsp of mixed herbs and stir.
Add sliced carrots, peas, stock and Worchester sauce, stir and simmer for approx 10
minutes. Mash sweet potatoes together until smooth with no lumps. Place mince mixture
into a large oven dish cover with sweet mash. Sprinkle the grated/sliced goat’s cheese over
sweet mash. Place in oven at 180C for 30 minutes. Serve with green beans and broccoli.

Options:
As an alternative topping to your beef mince try a mix of mashed potato and mashed
cauliflower 50:50 or mashed potato and celeriac.

Always have some frozen veg in your freezer. Peas, green beans and spinach are good
options.
