These are great for hungry kids after school or for lunchboxes.
2 cups porridge oats
1/2 cup desiccated coconut
½ cup ground almonds
½ cup flaked almonds
¼ cup raisins or chopped dates
1 banana, mashed
1 tsp cinnamon
½ cup butter/coconut oil
½ cup honeyMethod
Melt the butter and honey in a saucepan, add in all the remaining ingredients and mix well. The mixture should be quite wet, add in extra butter/honey if it is too dry.
Transfer to a baking tray, flatten down and bake at 140c for approx. 15-20 minutes until golden brown.
Variations: try blueberries instead of banana, hazelnuts instead of almonds.
